Friday Fuel: Mediterranean Bowl

Today I am sharing one of my favorite recipes to make when I want a quick and healthy lunch. This Mediterranean Bowl is a simple yet flavor-packed meal that is sure to make you feel amazing after! This bowl is filled with greens, chickpeas, cucumber, tomatoes, Kalamata olives, and red onion. To make it even better, a creamy homemade hummus is generously swirled on top of it all. It’s finished off with some feta and fresh lemon. It takes about 15 minutes to prepare and serves one person. Here’s the recipe!

INGREDIENTS

Hummus:
  • 1 15oz can chickpeas
  • ¼ cup tahini
  • ¼ cup fresh lemon juice
  • 2 garlic cloves minced
  • 2 tbsp extra-virgin olive oil
  • ½ tsp ground cumin
  • 2-3 tbsp water
  • salt to taste

Other:
  • 2 cups of greens (I used arugula and spinach)
  • ⅓ cup chickpeas
  • ⅓ cup diced cucumber
  • ⅓ cup diced tomatoes
  • ⅛ cup kalamata olives
  • ⅛ cup red onion slices
  • feta crumbles
  • fresh lemon


INSTRUCTIONS


1. Add all ingredients for the hummus into a food processor. Blend until completely smooth.
2. Dice and chop your veggies. Assemble your bowl and add your greens. Add the chickpeas, cucumber, tomatoes, Kalamata olives and red onion. Swirl a generous amount of hummus on top. Finish off with feta and a fresh squeeze of lemon. Enjoy!
